The cool thing about making your own water ice is that you don't need an ice cream maker. This is because, unlike cream ice cream, water ice cream doesn't need to be constantly stirred while freezing. You simply mix your favorite flavors together, pour them into a mold and place the delicious mixture in the freezer for at least 6 hours. As soon as the mixture is slightly frozen, insert the stick and leave to finish freezing.
The most important ingredients
You can't really go wrong when making your own water ice. Anything that tastes good is allowed.
The basis for a water ice recipe is always a liquid that can be refined as desired. Fruit juices, smoothies, coconut milk or yoghurt, for example, are suitable as a basic recipe.
Here is our favorite watermelon ice cream recipe:
1/2 kg watermelon (seeds removed)
5 tbsp sugar
1 tbsp lemon juice
some coconut milk
5-6 kiwis
First, finely puree the watermelon, 2 tbsp sugar and lemon juice. Carefully pour 2/3 of the mixture into the water ice mold and freeze for about 3 hours.
When the mixture is firm, it's time for the coconut part. To do this, whisk the coconut milk with half a teaspoon of sugar. Place the mixture in the freezer for 30 minutes until it is slightly frozen, then pour 1 tablespoon onto the melon ice cream at a time, smooth it out and place everything together in the freezer for 45 minutes.
Then prepare the final kiwi ice cream layer: Peel the kiwis with 2 tablespoons of sugar, puree and spread evenly over the already frozen water ice layers, and freeze again for 3 hours or so.
